Nakamura Hamono was founded in 2015 in Chiba, Japan. This hamono created their team from several up-and-coming traditional blacksmiths, crafters and sharpeners. They produce high quality knives in house and do collaboration knives with well-known bladesmiths.
ABOUT GINSAN (STAINLESS):
-Very durable steel, HRC 60-62
- Higher carbon stainless, with tight grain structure which makes it easier to sharpen and maintain edge longer.
-Same properties as Shirogami 2, expect with stainless properties.
OUR THOUGHTS:
We think Nakamura knives are very special. The Kaishin Thin-Series is a true laser and will be a great addition to any kitchen, professionally or in the home. The mid-level price range for the quality of this stainless blade makes these knives hard to keep in stock. Because these are made to order, the waitlist can be substantial so we recommend getting these while they are in stock.
USE AND CARE:
- Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break.
- Hand wash with warm water and towel dry.
- Use a sharpening stone to maintain the sharpness of the blade.
- Do not use a dishwasher to clean your knife.
