Kikuichi is one of the oldest blade makers in Japan. Dating back to the 13th century, the Kikuichi brand, recognized by the Chrysanthemum symbol, has been making Samurai swords before making the switch to kitchen knives a little over a hundred years ago. ABOUT GINSAN (STAINLESS):
-Very durable steel, HRC 60-62
- Higher carbon stainless, with tight grain structure which makes it easier to sharpen and maintain edge longer.
-Same properties as Shirogami 2, except with stainless properties.
OUR THOUGHTS:
-One of our favorite steels. This blade is balanced a little above the handle making it overall heavier on the blade. Perfect workhorses.
USE AND CARE:
- Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break.
- Hand wash with warm water and towel dry.
- Use a sharpening stone to maintain the sharpness of the blade.
- Do not use a dishwasher to clean your knife.
